Breakfast...aka crazy time in our house. We spend more time looking for socks, cleaning up spilt milk, and going to the bathroom...

Would I love to throw a Pop Tart or an Eggo in my children's direction every morning? Yes, I would. But, I also want them to be healthy, and be fueled, and get something of nutritional value. Oh, and I also don't want to clean up a huge mess...or cook.

I seem to have high expectations...I want something healthy...I don't want to cook...I don't want to clean up a mess. 

Enter....

Pumpkin Breakfast Cookies (original recipe found HERE.) 

The best part these can be made a day ahead of time...

You'll need:
1 1/4 cup oats
1 tablespoon cinnamon 
1/2 teaspoon salt
2 eggs
3/4 cup pumpkin
1/2 cup milk
1/3 cup pure maple syrup
1 tablespoon coconut oil - melted
2 teaspoons vanilla
1/2 cup chopped walnuts (optional)
1/2 cup chocolate chips (optional)
1/2 chia seeds (optional)

Pre-heat oven to 350 degrees. Whisk together the wet ingredients. Then add the dry to the wet. Mix in the optional goodies...if desired. Drop by onto baking sheet and bake for 10 mins. 


* Be sure to bake these on parchment paper or a silicon baking matte...or they will stick to the cookie sheet.


Overall these were liked by 3 out of 4 of my children. The sugar junkie in our house did not find them sweet enough. These were perfect for the baby, she loved them! They can be stored for a few days...just keep an eye on them...because they can become too moist and mold.
