Summer is a great time of year...it's laid back mixed with unique busy. We don't have to worry about school...homework...lunches...pick up and drop off lines...but we have days spent out of the house...six hour swim meets...seven baseball games in one weekend...the list goes on...we have weekly play dates...and sleepovers.
I also lose control over the laundry...the cleaning...and other chores.
Who wants to clean when you can soak up the sun?
Meal time can be a struggle in the summer...often times we want something quick we can grab on the go...because...well feeding four children can be expensive and unhealthy.
Enter homemade frozen PB&J un-crustable sandwiches.
These can eaten right away or they can be made by the dozen...and frozen for easy quick on the go meals.
First use a cookie cutter or glass to make circle shapes out of the bread.
Then fill with peanut butter and jelly of your choice...or just peanut butter...if that's what you fancy.
Then squeeze edges together...so nothing can squirt out the sides. If your feeling extra Martha Stewart like you can use a fork to make imprints along the edge, just like the kind you purchase at the store. there you have it...easy peasy...these can be placed in a freezer bag and frozen...that way you always have lunch ready.
Now remember when I mentioned sleep overs and cousins?I have nephew that spends a lot of time at our house and he has a severe peanut allergy. Obviously I wouldn't feed his this meal for lunch...but I must make sure the island counter is cleaned of peanut butter.
I make sure I really clean the surface.
