Rice. We eat a lot of it. I find it makes a great side dish and it is so versatile with adding different flavors to compliment different meals.

I have an easy rice recipe to share with you today!

You'll need:

1 cup of rice ( I used organic brown - you can use whatever style you prefer)
2 cups of veggie broth ( I like to flavor and vegetarian option of veggie broth)
2 bay leafs
2 tablespoons of olive oil
salt and peper to taste

Add all of the above ingredients to a pot and bring to boil. Once rice has boiled brig the temperature down to a simmer. Simmer for 15-20 mins...or however long is instructed on the packaging.

OPTIONAL FLAVORS ONCE RICE IS COOKED:

lemon + lime - 1 whole lemon + 2 small limes juiced - add juice to cooked rice.

lemon + lime + cilantro = add lime/lemon juice and a spring or two of fresh chopped cilantro- this is a copy cat recipe of your favorite assembly line mexican restaurant rice.

garlic + thyme + parsley - crush and chop all three ingredients and add to cooked rice.

sautéed mustard seeds + cumin + chili flakes + turmeric + onions + garlic - this is an Indian style rice. Saute mustard seeds, cumin, chili, and onions...then add turmeric and garlic...then add to cooked rice.

This past week I made a triple batch of rice...I used part of this on Sunday to add to Taco Soup...then I seasoned 1/3 of this with lemon/lime and placed it in Reynolds TM Disposable Heat & Eat Containers for lunch the next day.

I seasoned the last 1/3 of cooked rice with garlic + thyme + parsley...for Tuesday's dinner.
