Homemade breakfast cookies...sounds like a lot of work...I assure you it isn't. This is super simple, super healthy, and super yummy. Plus, you get to call it a cookie which makes small children feel like rebels while eating these for breakfast.

you'll need:
  • 2 1/4 cups oats
  • 3/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup peanut butter (or other nut butter)
  • 1/4 cup honey
  • 2 bananas, mashed
  • 1/4 cup chocolate chips (or raisins) (or cranberries) (or both)
Mix all ingredients together. Drop onto a greased cookie sheet and flatten the tops slightly. Bake  @325 degrees for 15-16 minutes or until slightly browned. Cool completely and store in an airtight container or freeze in a freezer bag.

disclaimer: While preparing this blog post on healthy homemade breakfast cookies...I allowed my small toddler to eat Cheetos at 8 am...true story.
