Pasta of Choice
1 cup of Capatriti Extra Virgin Olive Oil
1/2 cup of vinegar
Bunch of cilantro
1 package of cherry tomatoes
1 cup of green onions (about 2-3 bunches)
1-2cups of cheese (extra sharp cheddar)
4 large cloves of garlic
Juice of 2 limes
2 avocados
Salt + pepper
Cook pasta to liking. Add Olive Oil, vinegar, cilantro, green onions, garlic + lime juice to a blender and purée.
Pour mixture over cooked pasta. Add tomatoes, avocado, salt + pepper , and cheese (once pasta has cooled) - mix an eat.
Pair with grilled chicken or shrimp for a little more protein.
