CRUST:
2 cups graham cracker crumbs
1 stick salted butter, melted
Mix crumbs + butter and press into the bottom of a springform pan. Set aside until needed,
CHEESECAKE FILLING:
3 (8-ounce) packages Hy-Vee cream cheese at room temperature
1 (15-ounce) can pureed pumpkin
3 eggs
¼ cup sour cream
1½ cups sugar
½ teaspoon ground cinnamon
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
Beat @hyvee cream cheese until you see no lumps. You may need to scrape the sides. Once cream cheese is smooth, add pumpkin. ADD ONE EGG AT A TIME. Beat after each egg. Add @hyvee sour cream + cinnamon + vanilla. Beat. Add flour. Beat. Pour mixture into the cheesecake pan. Bake @ 350 for 60 mins. Remove and allow to cool.
GANACHE:
Equal parts chocolate chips + heavy cream
1 cup chocolate chips
1 cup heavy cream
1 tablespoon butter (optional - it makes the ganache glossy)
Heat cream to a simmer. Then remove from heat and pour over a cup of chocolate chips. Do not mix. Allow mixture to sit for 2 mins. Then stir until chocolate and cream are completely mixed together. Then pour half the mixture over the cheesecake, saving the other half to fill in empty spots on the cheesecake.
SPIDER WEB:
Melted white chocolate + parchment paper.
Melt chocolate and place into a baggie. Cut the tip of the baggy and draw a spider web on the parchment paper. Once the spider web is hardened, place on top of chilled cheesecake mins
