This blackberry almond cake is super simple to make!
You'll need:
Cake mix
Eggs
Butter
Milk
Blackberry jam
Almond extract
Icing
Get a box of cake mix...and get ready to change the directions...we are going to change a few things!
1.) Use egg white only and add ONE more egg than what the recipe calls for.
2.) Replace the oil with butter and double the butter. Melt it.
3.) replace water with milk.
4.) Add 1 teaspoon Almond extract.
Whisk the egg whites until fluffy. Add the melted butter. Add the cake mixture a little at a time. Then add the extract to the milk and add the milk.
JAM: mix 1/2 of jam with a splash of water + almond extract. Heat in the microwave for 30 seconds and the stir.
Pour half the batter in a greased Bundt pan.
Add the jam.
Pour the second half of the batter.
Bake according to package.
Once cooled iced the cake and top with berries.
