Fried eggplant with sauce and pasta is one of my favorite meals!
It's easy to make.
It cooks fast.
It is a vegetarian dish.
Eggplant is a vegetable-ish (by definition eggplant is actually a fruit) dish my children will eat with our complaining.
You'll need:
eggplant
buttermilk
bread crumbs (I used fish fry style crumbs /// you can use plain flour too)
pasta
oil (enough to cover the bottom of the pan)
mozzarella cheese
sauce ( I used Homestyle Ragu...oh yum! This is a thick sauce, a bold flavor filled with spices, and doesn't contain artificial ingredients ) I also like using a wholesome already mades jar sauce because it significantly cuts down on the cooking time.
FIRST // heat oil over med-high heat in pan, place buttermilk in a bowl, and then place bread crumbs (and additional seasonings if you chose...I used salt, pepper, garlic salt, paprika, and Italian seasonings ) PREHEAT oven to 350 // NEXT // slice the eggplant into 1/2 inch slices // THEN // dip eggplant into buttermilk and then into bread mixture // NEXT // place eggplant into oil fry on one side until bread crumbs are golden brown (few minutes)...flip over and cook other side // FINALLY // pour sauce all around eggplant and top the eggplant with cheese...bake for about 15 mins until cheese is melted and bubbly.
Eat alone, over pasta, or on a sandwich...your choice.
