Mornings, ice cream for breakfast, and a challenge.

Mornings in our house are...well...complete chaos. It is a mad house. Little girls need their hair done and a little boy needs a daily reminder to turn his shirt around...because its backwards...again. Lunches need to be prepared, water bottles need filling, the baby demands a bottle, and socks never seem to be in supply. Somewhere in midst of  all of this I need to feed my children a nutritious breakfast to get them through the day. 


I feed my children breakfast every day. I really don't see how they could get through the day with out it. I imagine they would become restless, it would be hard to concentrate, and they would lack focus without a proper start to the day. 

In all honestly I don't have the time to prepare or cook my children something fresh everyday. A lot of mornings they are eating something frozen, or cereal, or a granola bar...in the car...on the way to school...because most likely we are running behind. 

Full discloser...the craziness every morning...is totally my fault. You see I love laying in bed until I absolutely have to get up. I have four children, and I know that the second my feet hit the floor...that is it...I won't stop...or rest...or relax until 9 pm that night. 

I need to work on rising before my children do, getting water bottles ready the night before, having a breakfast plan in line, and just generally giving myself more time. 

I have been on the search for something quick and nutritious for mornings.


While strolling around, Sam's Club, my favorite place to feed my children lunch... and of course by lunch I mean getting samples. I picked up a box of Carnation Breakfast Essentials® because I remember seeing a recipe on Pinterest for banana ice cream...I thought Carnation Breakfast Essentials® would be the perfect addition to this. 

Why, oh, why haven't I tried this before???? 

Banana "ice cream" has three ingredients! Two if you leave out the peanut butter. 

You'll need:

2 sliced and  frozen bananas (I use organic and froze the bananas for about two hours.) (They can be frozen over night).
1 Tbsp. peanut butter (optional) 
1 package of Carnation Breakfast Essentials® (I used chocolate, but vanilla would be good too!) 

Place all ingredients in a food process and blend until it resembles ice cream. That is it!!! This was done in less than 60 seconds, and cost less than $1 for four servings. It was packed with vitamins, minerals, and protein. Also, it has the added bonus of being called ice cream. Who wouldn't want ice cream for breakfast!? All four of my children gobbled this up, and then asked if they could have it again for snack. 

I'm going to join the Carnation Breakfast Essentials® 7 day breakfast challenge and for 7 days get out of bed earlier...and work on preparing my children a real breakfast...even if it is banana ice cream for 7 days straight.
